Here is one for a Cuban home style dessert....

Rice Pudding (Federico - hope2008)
 
In a medium pot, place:
3 cups of water
1 cup of short grain rice (Valencia Rice is the best) ;
1 cinnamon stick, a pinch of salt, and a few drops of lemon juice,  
Let it sit a minimum of 2 hours.  Bring to a full boil, then lower the heat and continue to cook at this low setting until the liquid is almost all gone.  During this process stir occasionally so it doesn't stick to the pot. Once the liquid is almost gone, add: 
1 cup milk
1 can evaporated milk
1 cup of sugar (may use sugar substitute, of course)
Butter (to taste, this is arbitrary)
 
Continue to cook slow or medium setting, stir occasionally so it won't stick.  Continue this until the liquid is gone.
 
At this point some people eat it hot, but I like to coool it off and put it in the regfrigerator to eat cold!! YUM
